Undoubtedly, pav bhaji is ruling among all the road side food favorites. Trip to Mumbai is not complete if you have not eaten Pav bhaji, batata vada and bhelpuri. So, let us first start with quick method of making bhaji and then to serve it differently.

Cottage cheese has long been my favorite ingredient. It is a healthy option for vegetarian diet – an excellent source of calcium, minerals, rich in protein and is relatively low in fat.
These are very simple cottage cheese patties with crispy outside and velvety inside. I curated this recipe to cook in the least of oil with very few steps. List of ingredients seems to be long but it literally mixes in two minutes and cooks in 15 minutes. It is a tasty, liked by all, any time treat. Grilled paneer wraps can also be called as Kathi roll or Frankie. Actually, it is simply any vegetables or kebabs wrapped in tortillas, Flat bread, chapati or parantha. Key is to add few more ingredients or spices to enhance the taste.
These delicious paneer rolls are super easy to make. Though I fixed these rolls from leftover grilled paneer, added few salad leaves, capsicum, spiced onion and served with green chutney. Here I will provide recipe with minimum spices and ingredients; and prepared in least of the time. Sizzler is mine and my family’s favorite. It is a complete one dish meal and more often healthy too. I use herb rice, grilled chunk of cottage cheese and french fries, served along with assorted vegetables. Prepare all this in advance and place them on sizzling hot iron plate, topped with home made mix of sauces only at the time of serving. This sizzler plate is then placed in a wooden tray so that it becomes easy to hold. Little water is sprinkled to create the sizzling sound that tingles taste buds and for sure increase your appetite.
Sizzler can be based on any international cuisine. Just need to change sauce and main ingredients according to the flavor of that region. Rice can be replaced with noodles. Cottage cheese can be replaced with veggie cutlet or Indian potato patti and so on. There are various options but the important is to serve food steaming and sizzling hot. Very interesting assemble of healthy ingredients – Cottage cheese, vegetables and basil pesto… a great option for vegetarians. These steaks are easy to make with available ingredients. I used home made basil pesto (we can also use ready bottled one) and combined it with stir fry veggies. Green Kebabs are somehow similar to Hara Bhara Kebab – a favorite of Indian palate. I simplified the recipe by mixing all the ingredients in one step and by avoiding traditional method of deep frying. Instead, I opted for grilling which is much healthier and less cumbersome. Kebabs are loaded with healthy green vegetables like spinach, peas, coriander etc and flavored with readily available spices. It can be served as an appetizer or as a starter with green chutney. Falafel with Pita bread is an all time favorite, Middle Eastern delight. I made some small changes to make it easy to serve as cocktail bites. Instead of pita bread I used mini burgers and replaced chick peas falafel with lentil fritters since I keep them frozen. Added hummus (again ready and frozen), salad, green chutney and bites are ready. Serve it as evening snack or as an appetizer.

Pav bhaji is one of the most popular street food in Mumbai. Pav is a kind of a bread and bhaji means spicy curry of mix vegetables. Buttered and slightly roasted pav is served as an accompaniment with bhaji. Indian version of fondue is no more new but I tried for the first time and it turned out quite good. So I thought to share my recipe. To get smooth texture of fondue, I added some cheese and extra green capsicum to lift the flavor. Pav bhaji fondue can be served as an appetizer or on its own as a snack.
