Quinoa and Cherry Tomato Salad bowl

Organic supply of farm fresh baby tomatoes, motivated me to try making healthy salad. Tomatoes were absolutely red in color, thin skinned, plump and sweet in taste. I mixed them with quinoa and cream cheese. Added cranberries, mint leaves and fresh coriander. At the time of serving, garnished with chopped almonds and few mint leaves. Pan Fried Cottage Cheese & Veggie Patties

Cottage cheese has long been my favorite ingredient. It is a healthy option for vegetarian diet – an excellent source of calcium, minerals, rich in protein and is relatively low in fat.

These are very simple cottage cheese patties with crispy outside and velvety inside. I curated this recipe to cook in the least of oil with very few steps. List of ingredients seems to be long but it literally mixes in two minutes and cooks in 15 minutes. It is a tasty, liked by all, any time treat. Grilled Paneer Wraps

Grilled paneer wraps can also be called as Kathi roll or Frankie. Actually, it is simply any vegetables or kebabs wrapped in tortillas, Flat bread, chapati or parantha. Key is to add few more ingredients or spices to enhance the taste.

These delicious paneer rolls are super easy to make. Though I fixed these rolls from leftover grilled paneer, added few salad leaves, capsicum, spiced onion and served with green chutney. Here I will provide recipe with minimum spices and ingredients; and prepared in least of the time. Chopped Greens & Cottage Cheese Vegetable

I have always been a huge fan of cottage cheese and green vegetables. So I keep trying some variations. This one is a twist to our conventional palak paneer. Instead of palak puree, I used chopped palak and added fresh fenugreek leaves to it. This little change gave subtle difference in taste, flavor and appearance. Easy to make chopped green cottage cheese vegetable is rich in proteins and packed with healthy nutrients. Prepare it without onion and it will still taste great.

Roasted Cherry Tomato Quinoa bowl

Abundance supply of fresh farm produce of slender cherry  tomatoes, motivated me to try making this salad. Although, they were not absolutely red in color but they were thin skinned and sweet in taste. I roast them and added caramelize onions. To Quinoa, I  thought to use up and stir in mascarpone cream cheese. Final topping of cranberries, almonds and dressing of hot & sweet sauce; gave this fresh salad a sweet and crunchy taste. Very interesting  assemble of healthy ingredients – Cottage cheese, vegetables and basil pesto… a great option for vegetarians. These steaks are easy to make with available ingredients. Hello friends…It has been a while since I last updated my blog. I was travelling; went to my favourite destinations in the Himalayas – Rishikesh & Mussoorie.
