Pav Bhaji Bites

Easy and a quick way to serve most popular snack of Maharashtra – Pav Bhaji. I made it in to a small, light, interesting appetizer bites. Undoubtedly, pav bhaji is ruling among all the road side food favorites. Trip to Mumbai is not complete if you have not eaten Pav bhaji, batata vada and bhelpuri. So, let us first start with quick method of making bhaji and then to serve it differently.

Papad Churie with Caramelized Onions

Who can refuse papad as a starter or when served with any meal? Papads are spicy, light and appetizing. As name suggests, churie is a preparation of crushed papads, spices and ghee. It is quite a popular serve with Rajasthani cuisine. I gave twist to the taste by adding caramelized onion and fresh coriander to the basic recipe of churrie.

Grilled Paneer Wraps

Grilled paneer wraps can also be called as Kathi roll or Frankie. Actually, it is simply any vegetables or kebabs wrapped in tortillas, Flat bread, chapati or parantha. Key is to add few more ingredients or spices to enhance the taste.

These delicious paneer rolls are super easy to make. Though I fixed these rolls from leftover grilled paneer, added few salad leaves, capsicum, spiced onion and served with green chutney. Here I will provide recipe with minimum spices and ingredients; and prepared in least of the time. Roasted Cherry Tomato Quinoa bowl

Abundance supply of fresh farm produce of slender cherry  tomatoes, motivated me to try making this salad. Although, they were not absolutely red in color but they were thin skinned and sweet in taste. I roast them and added caramelize onions. To Quinoa, I  thought to use up and stir in mascarpone cream cheese. Final topping of cranberries, almonds and dressing of hot & sweet sauce; gave this fresh salad a sweet and crunchy taste. Cheesy Hot Cross Buns

You can’t go wrong in making these cheesy, easy to cook buns. I used mini burger bread, vegetables, processed cheese and few herbs. You can use any vegetable and any type of cheese. Water Chestnut Corn & Green Onion Salad

This salad is for water chestnut lovers. It is tasty, healthy and clean way to eat them as they are stir fried in olive oil with onion and chilly flakes. I also added boiled sweet corn and garnish of peanuts with fresh mint leaves. My friend made this salad directly by mixing all the ingredients together, that means no cooking and still it was tasty and crunchy.

Cottage Cheese Steak with Pesto n Stir Fry Veggies in Home made Sauce

Very interesting  assemble of healthy ingredients – Cottage cheese, vegetables and basil pesto… a great option for vegetarians. These steaks are easy to make with available ingredients. I used home made basil pesto (we can also use ready bottled one) and combined it with stir fry veggies. Cottage cheese steaks with vegetables is quite filling, it can be served as a main course or cut them into small pieces to enjoy it as a starter. Crispy Corn Bhel

Very simple and easy to make healthy appetizer. Bhel is a very popular street food in Mumbai. It is a mixture of puffed rice, onions, potatoes; topped with variety of chutneys. For Crispy Corn Bhel, I added corn kernels and few more readily available ingredients only to make it more crunchy and little different in taste. Minty Paneer (Chutney & Paneer)

An another work with paneer….my favourite ingredient. It is a simple recipe of grilled paneer with chutney. And I made it further simpler by using frozen cubes of green chutney, which I always keep handy. We just have to marinate paneer cubes in green chutney and bake it till crisp. Sprinkle chat masala over it for chatpata (tangy) flavour; and the taste is irresistible.

 Minty Paneer goes well as a starter or can be served as an appetizer. Make a meal by using it as filling with tortilla wraps by adding sliced raw onion and chat masala or enjoy on it’s own as a main course with roomali roti. Continue reading Minty Paneer (Chutney & Paneer)
