Organic supply of farm fresh baby tomatoes, motivated me to try making healthy salad. Tomatoes were absolutely red in color, thin skinned, plump and sweet in taste. Roasted Cherry Tomato Quinoa bowl

Abundance supply of fresh farm produce of slender cherry  tomatoes, motivated me to try making this salad. Although, they were not absolutely red in color but they were thin skinned and sweet in taste. I roast them and added caramelize onions. To Quinoa, I  thought to use up and stir in mascarpone cream cheese. Final topping of cranberries, almonds and dressing of hot & sweet sauce; gave this fresh salad a sweet and crunchy taste. Baby Spinach, Mandarin Orange & Dried Cranberry Salad

Farm fresh organic produce of baby spinach, tempted me to try making this healthy green fruity salad. A Colorful combination of green baby spinach, cranberries and mandarin oranges, with crunch of roasted almonds and pungent sesame seeds gives it an irresistible taste and flavor. Drizzle of vinaigrette; makes it a perfect sweet n savory salad.

Super Easy Saffron Sweet Rice

The festival of Diwali was celebrated last week with lots of lights, candles, lanterns & variety of meethai (sweets). Non of the Indian festivals are complete without sweets. This time I thought to add one of the favorite traditional Indian dessert to my blog after working out a super easy way to prepare it. Saffron Sweet Rice is long grain rice (preferably Basmati variety) cooked with saffron, whole dry spices, sugar and ghee. All these ingredients gives it  beautiful color and irresistibly rich fragrance. It is a perfect dessert for lunch, dinner or any traditional get together.

There are various ways to prepare sweet rice and I find them to be quite cumbersome. I simplified the recipe by using cooked rice with very few cooking steps. It is surprisingly,  fast to cook and can be easily prepared with leftover rice. Continue reading Super Easy Saffron Sweet Rice
