Quinoa and Cherry Tomato Salad bowl

Organic supply of farm fresh baby tomatoes, motivated me to try making healthy salad. Tomatoes were absolutely red in color, thin skinned, plump and sweet in taste. I mixed them with quinoa and cream cheese. Added cranberries, mint leaves and fresh coriander. At the time of serving, garnished with chopped almonds and few mint leaves. Abundance of fresh pea pods can be seen in the vegetable market during winter season in Mumbai. They are freshly brought locally or from northern part of India. It is naturally sweet and taste great when mix with crunchy peanuts and smoky corn. This salad is simple to make with least of effort and ingredients. Roasted Cherry Tomato Quinoa bowl

Abundance supply of fresh farm produce of slender cherry  tomatoes, motivated me to try making this salad. Although, they were not absolutely red in color but they were thin skinned and sweet in taste. I roast them and added caramelize onions. To Quinoa, I  thought to use up and stir in mascarpone cream cheese. Final topping of cranberries, almonds and dressing of hot & sweet sauce; gave this fresh salad a sweet and crunchy taste. Arugula Leaves Apple Salad With Sesame Dressing

Simple, easy to make salad with very distinct peppery flavored arugula leaves and juicy sweet apples. I added some candied walnuts for crunchiness. And in dressing; I used roasted sesame seeds. Falafel Bites

Falafel with Pita bread is an all time favorite, Middle Eastern delight. I made some small changes to make it easy to serve as cocktail bites. Instead of pita bread I used mini burgers and replaced chick peas falafel with lentil fritters since I keep them frozen. Added hummus (again ready and frozen), salad, green chutney and bites are ready. Serve it as evening snack or as an appetizer.

Watermelon & Tomato Salad Topped with Caramelized Onion, Cottage Cheese & Walnuts

Combination of ingredients are very unusual in this salad. I just worked with fruits & veggies available with me….and the result was quite satisfactory. My all time ready salad dressing came handy here and made my work easier. Fortunately, salad turned out quite tasty, crunchy and colorful. Pear, Candied Walnut & Green Leafy Salad

It has been long since I last put up my post….actually it seems like starting new. Got quite tied up with Diwali festivities, vacations and other activities focusing home and family. Grilled Zucchini & Bell Pepper Salad

Very interesting, colourful hot salad made with my favourite vegetable zucchini with yogurt marinade. It is simple, easy and fast to cook. We can grill it in tandoor, in electric oven or toss these veggies in large skillet. Cook either way, taste will remain same because of marinade and herbs.
