Simple, easy to make salad with very distinct peppery flavored arugula leaves and juicy sweet apples. I added some candied walnuts for crunchiness. And in dressing; I used roasted sesame seeds. Falafel with Pita bread is an all time favorite, Middle Eastern delight. I made some small changes to make it easy to serve as cocktail bites. Instead of pita bread I used mini burgers and replaced chick peas falafel with lentil fritters since I keep them frozen. Added hummus (again ready and frozen), salad, green chutney and bites are ready. Serve it as evening snack or as an appetizer.

Combination of ingredients are very unusual in this salad. I just worked with fruits & veggies available with me….and the result was quite satisfactory. Very interesting, colourful hot salad made with my favourite vegetable zucchini with yogurt marinade. It is simple, easy and fast to cook. We can grill it in tandoor, in electric oven or toss these veggies in large skillet. Cook either way, taste will remain same because of marinade and herbs.
