Abundance of fresh pea pods can be seen in the vegetable market during winter season in Mumbai. They are freshly brought locally or from northern part of India. It is naturally sweet and taste great when mix with crunchy peanuts and smoky corn. This salad is simple to make with least of effort and ingredients. Enjoy it as a light meal or relish it at any time of the day.
- Serving portions totally depends on the time of serving. I served as a salad and prepared for 4 persons
- Time require – 20 minutes including boiling and cutting
- Mixing bowl and a frying pan
Ingredients:
- Boiled corn kernels – 1 cup
- Boiled fresh Peas – 1 cup
- Butter – 1 tablespoon melted
- Carrot – 1/2 cup finely chopped
- Onion – 1 tablespoon finely chopped
- Roasted peanuts – 1/2 cup crushed
- Green chilly – 1 finely chopped (or as per taste)
- Ginger – 1 teaspoon grated
- Fresh mint and coriander leaves – 1 tablespoon
- Lime juice – 1 tablespoon
- Chat masala – 1 teaspoon
- Salt and black pepper – as per taste
Method:
- Dry roast corn kernels in frying pan on high flame. Roast for 2 minutes to get smoky burnt taste. Add butter to hot kernels and mix with all the other ingredients. Serve cold.
Tips & Tricks:
- Use garden fresh peas not the frozen ones
- Ingredients can be adjusted as per taste
- Make it spicy, it taste better since all the ingredients are on sweeter side
- You can add any nuts
- Keep corn and vegetable mix ready. Add salt and spices at the time of serving
