Pav Bhaji Bites

Easy and a quick way to serve most popular snack of Maharashtra – Pav Bhaji. I made it in to a small, light, interesting appetizer bites. Undoubtedly, pav bhaji is ruling among all the road side food favorites. Trip to Mumbai is not complete if you have not eaten Pav bhaji, batata vada and bhelpuri. So, let us first start with quick method of making bhaji and then to serve it differently.

Bhaji is a spicy curry of mixed vegetables cooked in specially blended spices and served with warm, soft, buttered shallow fried pav (type of burger bread). It is quite filling, healthy and favorite anytime meal option.


Serving: 8 round bites

Cooking time: 45 minutes

Cooks in: Shallow pan for bhaji, Oven to grill bread


  1. Potato – 1 cup boiled and finely chopped or coarsely mashed
  2. Mix vegetables (peas, cauliflower,carrot) – 1 cup in equal proportion, finely chopped and then boiled
  3. Capsicum – 2 tablespoons finely chopped
  4. Tomato puree – 3 cups
  5. Onion puree – 1 cup
  6. Pav Bhaji masala – 2 tablespoons
  7. Red chilly powder – 1 teaspoon or as per taste
  8. Turmeric powder – 1/2 teaspoon
  9. Lime juice – 1 tablespoon
  10. Cheese – 2 tablespoons grated
  11. Bread slices – 4 slices, two rounds each bread
  12. Butter – 2 tablespoons
  13. Fresh coriander – 2 tablespoons for garnishing
  14. Salt as per taste


  1. In a pan saute onion puree in two tablespoons of butter for 2 minutes. Add capsicum and stir again for two minutes. Add boiled veggies, coarsely mashed potato and spices. Cook on medium heat for 5 minutes
  2. While bhaji is cooking switch on the oven
  3. Add tomato puree to the bhaji mix. Cook covered on high flame for 5 minutes and then reduce heat so that all the spices blends well with the vegetables. Switch off the burner after 10 minutes of cooking. Open the lid and properly mash the bhaji with the help of muddler.
  4. Neatly cut out rounds from the bread using round cutter. Top each round with the bhaji, grated cheese and coriander. Grill or bake them in already heated oven till it become crispy. Serve hot

Tips & Tricks:

  • ¬†Ingredients… although list is long, are actually just veggies, potato, onion and tomato, spices and cooking medium
  • Cooking method looks lengthier but in fact it is only because you are adding each ingredient one by one with the interval of two minutes and that is for cooking
  • Bhaji should be thick like dips and not watery otherwise it will be difficult to place it on bread
  • Size of round bite is as per choice. Accordingly by bread slices
  • Pav bhaji masala is an important ingredient which is conveniently available in the market or Indian stores
  • You can replace butter with any oil. Add dollop of butter after vegetable is cooked, it really adds flavor
  • Use chopped onion as topping for crunchiness
