Pan Fried Cottage Cheese & Veggie Patties

Cottage cheese has long been my favorite ingredient. It is a healthy option for vegetarian diet – an excellent source of calcium, minerals, rich in protein and is relatively low in fat.

These are very simple cottage cheese patties with crispy outside and velvety inside. I curated this recipe to cook in the least of oil with very few steps. List of ingredients seems to be long but it literally mixes in two minutes and cooks in 15 minutes. It is a tasty, liked by all, any time treat. Serve it with a scoop of mashed potato and barbecue sauce to make it a complete main course meal.

Serves: for 2

Cooks in: 30 minutes

 To cook in: Non stick grill pan or flat pan

Ingredients:

  1. Cottage cheese – 400 grams or 2 cups crumpled
  2. Potato – 1 boiled, grated or mashed
  3. Vegetables – 1/2 cup finely chopped & boiled. Mix of carrot & french beans
  4. Green chilly – 1/2 teaspoon finely chopped (use as per taste)
  5. Fresh coriander – 1/2 cup washed & finely chopped
  6. Bread – 1 slice
  7. Corn four – 1 tablespoon
  8. Red chilly powder – 1 teaspoon
  9. Salt & pepper – as per taste
  10. Bread crumbs – 1 tablespoon
  11. Cooking Oil – 2 tablespoons

Method:

  1. Mix all the ingredients evenly in a large mixing bowl, leaving aside bread crumbs and cooking oil
  2. Switch on the burner and heat up the grill pan. Meanwhile, start making flattened patties from the cottage cheese mix. Coat each patty with bread crumbs
  3. Grease pan with oil and start grilling patties. Use drops of oil in between. Carefully flip sides and drizzle oil again. Cook till you get brownish color streaks on both sides. You may have to flip sides and use oil once or twice to get uniform color
  4. Serve hot with mashed potato and barbecue sauce

Tips & Tricks:

  • Squeeze out water completely from the vegetables before mixing
  • Adjust Green chilly & red chilly powder quantity as per taste
  • Corn flour, bread and mashed potato are used only for binding purpose. In case cottage cheese mix is somehow loose and not forming then add either of them to roll out soft but firm patties
  • Use any vegetable of your choice
