Papad Churie with Caramelized Onions

Who can refuse papad as a starter or when served with any meal? Papads are spicy, light and appetizing. As name suggests, churie is a preparation of crushed papads, spices and ghee. It is quite a popular serve with Rajasthani cuisine. I gave twist to the taste by adding caramelized onion and fresh coriander to the basic recipe of churrie.

There are variety of papads available in the market. Choose as per your taste. Preferably, thick papads will be good for this preparation since it will remains crispier for long.


Cooking time: 15 minutes

Cooks in: Microwave or any stove, frying pan


  1. Papads – 4
  2. Onion – 1 large sliced
  3. Fresh coriander – 1 tablespoon finely chopped
  4. Ghee or melted butter – 1 tablespoon or less (as per choice)
  5. Chat masala – 1 teaspoon
  6. Sugar – 1 teaspoon


  1. In a flat pan, warm 1/2 teaspoon of butter or ghee. Add sugar. Stir till it melts and turns brown. Add onion, stir till it caramelize
  2. Roast papads one by one in microwave on high setting for 30 seconds. Once again roast each of them on stove. Roasting twice will make them more crispier
  3. Roughly crush all the papads in a deep pan and combine all the ingredients. Mix well and serve immediately

Tips & tricks:

  • Choose thicker verity of papads to retain crispiness for long
  • You can roast papads for once also but doing twice makes it more crunchier
  • To serve later and save time, keep crushed papads, caramelized onions and coriander ready. Just mix them at the time of serving
  • You can also use fried papads, they taste equally good
  • Additional topping of warm ghee and red chilly powder enhance the taste
