Vegetable Sizzler with Paneer & Herb Rice

Sizzler is mine and my family’s favorite. It is a complete one dish meal and more often healthy too. I use herb rice, grilled chunk of cottage cheese and french fries, served along with assorted vegetables. Prepare all this in advance and place them on sizzling hot iron plate, topped with home made mix of sauces only at the time of serving. This sizzler plate is then placed in a wooden tray so that it becomes easy to hold. Little water is sprinkled to create the sizzling sound that tingles taste buds and for sure increase your appetite.

 Sizzler can be based on any international cuisine. Just need to change sauce and main ingredients according to the flavor of that region. Rice can be replaced with noodles.  Cottage cheese can be replaced with veggie cutlet or Indian potato patti and so on. There are various options but the important is to serve food steaming and sizzling hot.


Makes: 2 serving

Cooking in advance: 45 minutes

Assemble and heating tray: 15 minutes

Need: 2 sizzler tray, pan and grill pan


  1. Cottage cheese or paneer – 300gms sliced into 1mm thick square big chunks
  2. Rice – 2 cups boiled
  3. Basil leaves – 1 tablespoon chopped
  4. Frozen french fries – 2 cups fried
  5. Assorted vegetables – 4 cups chopped into big pieces. Red yellow and green capsicum, zucchini, baby corn, broccoli
  6. Onion – 2 large sliced
  7. Cabbage – 5 to 6 leaves blanched
  8. sugar – 1/2 teaspoon
  9. Olive oil – 4 tablespoons
  10. Salt as per taste

For sizzler sauce:

  1. Tomato sauce – 4 tablespoons
  2. Black pepper sauce – 3 tablespoons
  3. Soy sauce – 2 tablespoons
  4. Vinegar – 1 tablespoon

Whisk all the above ingredients to prepare sauce

Method to cook and keep in advance:

  1. Marinate paneer pieces with 1 tablespoon sizzler sauce and salt. Keep aside
  2. Prepare boiled herb rice using basil. Keep aside
  3. Stir fry vegetables in one tablespoon oil for 5 minutes on high flame. Keep aside
  4. Caramelize onion using sugar and one teaspoon oil
  5. Grill marinated paneer pieces on grill pan using 1 tablespoon of oil. Flip sides for uniform brown grilling

Method to assemble and serve sizzler tray:

  1. Grease iron tray and line it with blanched cabbage leaves
  2. Put the trays on high flame of the burner and start stacking ingredients one by one. Rice on one side, followed by veggies, french fries and then grilled paneer. Top the rice with caramelized onions. Spread generous amount of sauce on top and smear some in between
  3. Once the tray is hot enough, drizzle some oil. Sprinkle and smear 1 tablespoon of water in between so that preparation sizzles and steams.
  4. Serve immediately with extra serving of sauce

Tips & Tricks:

  • Paneer pieces should be thick so that they don’t break while grilling and flipping
  • Glaze paneer pieces with some more sauce while grilling, it gives nice color
  • Add chilly sauce or extra black pepper sauce to make it more spicy sauce
  • Do not over cook rice, it should have long separated grains. For that reason I prefer using Basmati rice
  •  You can use any rice if long grain rice is not available
  • Use any herb while boiling rice
  • Vegetable should be crunchy not over cooked
  • Pat a dollop of butter just before serving, it enhance flavor and it taste great
  • If finding it difficult and hard to assemble ingredients while the tray is on burner? Than first arrange everything and then put the tray on stove
