Grilled Zucchini & Bell Pepper Salad

Very interesting, colourful hot salad made with my favourite vegetable zucchini with yogurt marinade. It is simple, easy and fast to cook. We can grill it in tandoor, in electric oven or toss these veggies in large skillet. Cook either way, taste will remain same because of marinade and herbs.

Serve on it’s own as a salad or roll up these colourful grilled vegetables in tortilla wraps with chopped onions and any dressing of choice.20160929_211659

Cooking Time : 35 minuted

Cook in : Electric tandoor, oven or large non stick pan with lid

Ingredients :

  1. Vegetables – I cup each of assorted vegetables, chopped in to big pieces – zucchini, onion, mushrooms red yellow and green pepper
  2. Black pepper powder – 1/2 teaspoon
  3. Basil powder – 1 teaspoon
  4. Thyme powder – 1 teaspoon
  5. Lime juice – 1 teaspoon or as per taste
  6. Butter or Ghee – 1 tablespoon ( optional )
  7. Salt as per taste

For Yogurt Marinade :

  1. Hung curd or Greek yogurt – 2 tablespoons
  2. Tandoor Chicken masala – 1 tablespoon
  3. Red chilly powder – 1/2 teaspoon
  4. Ginger – 1 teaspoon grated
  5. Salt as per taste

Method :

  1. Prepare marinade by mixing all the ingredients.
  2. Marinate all the cut vegetables and keep in refrigerator for 15 minutes.
  3. Remove and add butter or ghee. Now, grill vegetables in preheated oven. Turn sides in between cooking. It will take around 15 minutes.
  4. Once cooked, vegetables will becomes little dry with golden sheen.
  5. Sprinkle lime juice, salt, basil and thyme powder.

Hot salad is ready to serve.

Tips & Tricks :

  • We can also add baby corn, potatoes or even broccoli to our list of assortment.
  • Cooked vegetables will become half the quantity once cooked.
  • Cook some extra quantity to use nexy day to make wrappes or top it on toaste.
  • If chicken masala is not handy than use roasted cummin powder, black pepper powder and chat masala in marinade.
